The coffee family tree

Coffee varieties: the verified, the debated, and what's in your cup.

Seven guides written by the house rule: zero hype. Each variety, with its real lot on the bar.

Coffee isn't a single flavor: it's a family tree. Each variety — each branch of that tree — brings its own history, its genetics (sometimes debated) and its profile in the cup. We write these guides by the house rule: what's verified is stated, what's debated is debated, and what isn't known, we say so. And every variety we talk about is on our bar, with farm and producer in plain sight.

Why does a roastery write guides?

Because we sell coffees you need to understand to fully enjoy. A natural sidra is nothing like a washed bourbon, and that difference —variety, process, farm— is exactly what you pay for when you buy specialty coffee. We'd rather you bought knowing. The guides connect to the real coffees in the collection: each one links to the house lot that matches its variety.

Who's behind this?

Dif≠erente is the roasting house of Carlos Escobar — 2024 National Filter Coffee Champion and third in the world at the 2025 World Brewers Cup. The varieties in these guides aren't theory: they're the ones this house roasts, brews and takes to competition.
